La Dieta del arroz fue la denominación popular de un régimen alimenticio que surgió en los inicios del tratamiento de la hipertensión, indicada por el doctor norteamericano Walter Kempner (1949) en el Duke Hospital,[1]​ La dieta era diseñada por su restrictivo bajo contenido de sodio (dieta anti hipertensiva) y por la ingesta de alimentos con bajo contenido de grasas saturadas y proteínas, con especial atención en raciones de pequeño tamaño

The Rice Diet was the popular denomination of a diet that emerged at the beginning of the treatment of hypertension, indicated by the American doctor Walter Kempner (1949) at Duke Hospital. The diet was designed by its restrictive low content of sodium (anti-hypertensive diet) and the intake of foods with low content of saturated fats and proteins, with special attention to small portions.
